We recently had a chance to talk to Katy O’Donovan, an inspiring home-cook who was a contestant on this year’s Masterchef  about what she has been getting up to in her kitchen during lockdown!
Fritters are currently Katy’s go-to-choice of comfort food and she has been kind enough to send some of her recipes our way.
Plain white flour can be hard to come by during lockdown, and this recipe is great for mixing and matching flours! If you are out of regular flour, substitute for rice, coconut or gluten free flour, and if you are coating your chicken or vegetables and don’t have breadcrumbs on hand, bash up cornflakes or blitz oats!

A mix and match recipe for you to use the flours you have available.

Oatmeal Fried Chicken

✅ Blitz 150g porridge oats in a blender until relatively smooth, mix with 1tsp salt, ½ tsp white pepper and a few of your favourite herbs. Here we are using oregano, smoked paprika and chilli powder.
✅ Lay out three lipped plates (or shallow bowls). Fill one with flour (any flour), one with beaten egg and one with your oat mixture. *use a little extra moisture if using coconut flour.
✅ Coat four boneless chicken thighs in the flour, egg and lastly your oats. Fry in 1tbs of oil on a high heat until golden all over and drain on a kitchen towel when cooked. Serve with a simple shredded salad or slaw.
✅ Whizz up some mayo, yogurt, lemon, salt and any soft herbs available to create a delicious sauce!
