This sumptuous Torta Caprese (Chocolate and Almond Flourless Cake) is originally from the island of Capri, in the region of Naples, in Italy.
The recipe is a key cake in my family. It come very handy when there is no time and you need something delicious and rich. Chocolate lovers very often go crazy, I have to warn you.
The other day I was asked to make a cake for a client’s wife. It was her birthday and her husband wanted to surprise her in these challenging times for special celebrations.
I’m not a chocolate lover myself, so I searched for help from one of the biggest chocolate lover I know: my mum, who is very picky about her chocolate and her desserts.
She sent me the photo of the recipe of this Torta Caprese, which is a Chocolate and Almond Flourless Cake, handwritten. How can one not smile with a message like this?
A tip: choose a good dark chocolate, I normally go for 70% cacao . The rest is easy-peasy.
Torta Caprese (Chocolate and Almond Flourless Cake)
300g almond flour
250g dark chocolate
Beat butter with half of the sugar and egg yolks.
Beat egg whites till soft peak.
Add rest of sugar, vanilla and egg whites to the mix gently.
Butter a non-stick round springform tin.
Bake at 160C for 35 minutes.
