Salad blast today with this gorgeous homemade Caesar Salad Dressing. So much better than industrialised condiment!
One of the positive things about this tough moment is to try making things you’d normally buy. I particularly find ready-made Caesar Salad Dressings disgusting. They are too creamy and too heavy for my taste. 
I am very pleased with this one, light, fresh and rewarding. 

Easy-peasy and rewarding.

Caesar Salad Dressing

100ml olive oil
1 tbsp vinegar
2 garlic cloves, crushed
100g parmesan, fine grated
2 tbsp mayonnaise
2 tbsp Dijon mustard
Lemon juice, for seasoning
Salt and pepper for seasoning
1-2 anchovies finely chopped
.
Mix it all very well. Use a few drops of cold water if you need to balance it. Store in a small bottle or jar, and it will be enough for a few days.
